This recipe came from my Aunt Mary, they are easy, chewy. Make at Christmas time is really nice. Ingredients:
2 cups all-purpose flour |
2 teaspoons baking powder |
1/4 cup brown sugar |
1/4 cup vegetable shortening (crisco) |
1/4 cup butter |
1/2 cup granulated sugar |
1 large egg yolk |
2 teaspoons vanilla |
3 tablespoons evaporated milk |
1 teaspoon baking soda |
1 cup gumdrop, cut up fine |
2 egg whites |
1 cup brown sugar |
1 cup coconut |
Directions:
1. Mix all the above ingredients. 2. Press into a 7 x 11 greased baking pan. 3. Press the gumdrop pieces into the dough. 4. beat egg whites with brown sugar to make a soft meringue. 5. fold in the coconut. 6. Spread evenly on top. 7. Bake 325 degrees oven F. 8. Bake 25 minutes. 9. Note: the topping is a double recipe thats the way my family like them. 10. You can make one egg white 1/2 cup sugar, and 1/2 cup coconut if desired. 11. Remove and cool on rack. 12. Cut when cool, into squares. |
