This is a traditional Holiday Cake that everyone seems to have on hand at Christmas time - everyone enjoys it, and it tastes so good with a great cup of coffee or tea!! Ingredients:
1 cup butter |
3 eggs |
2 1/2 cups sugar |
3 3/4 cups flour |
2 1/2 teaspoons baking powder |
1 teaspoon salt |
1 cup warm milk |
1 cup crushed pineapple in juice |
1 cup coconut |
1 lb gumdrop, cut up, no black |
1 teaspoon lemon juice |
1 teaspoon vanilla |
1 lb raisins (optional) |
Directions:
1. Cream butter and eggs with sugar. Add flour mixed with baking powder and salt, alternately with pineapple and warm milk. Add lemon and vanilla. Dredge gum drops and raisins wirth 1/2 cup flour. Add coconut and mix. 2. Bake at 325°F Place a pan of water in oven with loaves for moisture. |
