This spicy Cajun dish is perfect for a group ... slightly hot to very hot is the best way to create it! Served with crusty bread and it's a gem dish! Ingredients:
6 chicken thighs - skinned and cooked, then cut into chunks |
4 - 6 'hot' beef sausage links - cooked and sliced diagonally |
12 oz or more - crab meat - you can use the imitation (less expensive), but of course the real thing is best |
20 - 30 shrimp - shelled and devined |
3 - 4 stalks celery, diced |
3 - 4 cloves garlic, diced |
1 medium onion - diced |
2 x 14 oz cans stewed tomatoes |
olive oil |
water |
gumbo file spice - use 1/2 ot 1 full package - to your taste, the more the spicer it is. this spice can be found on the hanging package section of the supermarket in the spices area. |
2 - 3 tblsp flour |
cooked rice - 1 cup per person |
Directions:
1. Boil chicken with garlic and celery in large pot 2. Brown sausage with onions in oil- save meat juices and oil 3. Combine chicken and its broth, sausage and onions, tomatoes, crab meat and shrimp and Gumbo File spice. Brown flour in remaining meat juices and oil and add to pot. Simmer for about 1/2 or more to cook seafood and blend flavors. Add a little water if needed to thin slightly as preferred. 4. Ladle Gumbo over cooked rice and serve with crusty bread. |
