My mom gave me this recipe for Gumbo. It's the best I've ever had. Ingredients:
1 large pkg chicken thighs |
1 large pkg sausage |
1 medium bell pepper |
1/3 c cajun seasoning |
2 large cans whole tomatoes or diced whichever you prefer |
2 cans okra (can use 1 pkg of frozen okra if can't find cans) |
1 medium onion |
1 1/2 cup instant rice |
Directions:
1. Boil chicken and debone it. 2. Do NOT pour out water from chicken. 3. Put chicken back in broth, add chopped celery, bell pepper, and onion; cook about 20 minutes. 4. Add tomatoes and okra. 5. Let come to a boil. 6. Take sausage and slice; boil in separate pot and then add to gumbo. 7. Also add 1/3 cup of cajun seasoning, let simmer 10 minutes. (I sometimes add more seasoning for more spice!) 8. Add rice and let sit for 10 minutes and gumbo is ready. |
