Ingredients:
1 cup red lentils |
4 cups water |
2 tablespoons tomato paste |
1 cup uncooked bulgur wheat |
1 small onion, finely minced |
2 tablespoons olive oil |
1/8 teaspoon ground red pepper |
1/4 teaspoon ground cumin |
1 teaspoon paprika |
1/2 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
1/3 cup chopped fresh parsley |
1/4 cup fresh lemon juice |
romaine lettuce leaves |
lime wedges |
Directions:
1. Cook lentils, uncovered, in water over medium-high heat 12 to 15 minutes or until tender (do not drain). Stir in tomato paste and bulgur; cover and let stand 20 minutes. Combine lentil mixture, onion, and next 8 ingredients. 2. Form football-shaped patties, using a heaping tablespoon of mixture for each patty. Serve on romaine lettuce leaves with lime wedges. |
