GULF COAST SHRIMP SPREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mason Estate in Kaufman, Texas in 2004. Ingredients:
2 quarts water |
1-1/4 pounds medium fresh unpeeled shrimp |
1 large shallot peeled and quartered |
1-1/4 cup sour cream |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon grated lemon rind |
1 tablespoon fresh lemon juice |
1/4 teaspoon hot sauce |
Directions:
1. Bring water to boil in large saucepan then add shrimp and cook 5 minutes. 2. Drain well and rinse with cold water then let cool. 3. Peel and devein shrimp then set aside. 4. With food processor on drop shallot through food chute and process until finely chopped. 5. Add shrimp to processor and pulse 10 times or until shrimp is finely chopped. 6. Combine shrimp mixture and remaining ingredients in bowl then stir well. 7. Cover and chill. |
