Gule Aeter - Danish Pea Soup |

Most cultures have a pea/lentil soup and this one is the Danish version. The Vienna sausages are optional. Ingredients:
2 cups yellow split peas |
1 liter water |
1 teaspoon salt |
500 g bacon, chopped |
2 stalks celery, chopped |
3 leeks, chopped |
3 carrots, peeled & chopped |
3 potatoes, peeled & chopped |
1 onion, chopped |
1 smoked ham hock |
125 g vienna sausages, chopped |
salt and pepper |
Directions:
1. Place all the ingredients into a large pot, bring to the boil and simmer for 1 1/2 hours. 2. Remove the hock from the soup and remove the meat from the bone, chop into small pieces and put back into soup. 3. Serve. |
