Simple yet delicious way to cook green beans. Goes well with Indian meals and gilled and roasted meats. Can do the blanching well ahead of time and finish just before you eat. Ingredients:
450g fresh green french beans |
4 tbsp vegetable oil |
1 tsp mustard seeds |
4 cloves garlic, peeled and chopped |
1 hot dried red chilli |
1 tsp salt |
1/2 tsp sugar |
fresh black pepper |
Directions:
1. Trim the beans and cut into 2.5cm lengths. Blanch in pot of rapidly boiling water for 3-4 minutes until just tender and drain immediately, rinse under cold water. 2. Heat the oil in a large frying pan and add mustard seeds. When popping add garlic and fry till light brown. 3. Add chilli and stir for a few seconds before adding beans, salt and sugar. 4. Turn heat to med-low and cook for 7-8 minutes till all flavours absorbed. Add the pepper, mix and serve. |
