Gujerati Green Beans Gi Jane |

A simple spiced vegetable side-dish Ingredients:
1 lb green beans, trimmed and cut into 1 lengths |
4 cloves garlic, finely chopped |
1 tablespoon mustard seeds (black) |
1 (dried red) chili pepper, finely chopped |
1 tablespoon olive oil |
1/4 teaspoon salt |
1/2 teaspoon sugar |
Directions:
1. Add the beans to boiling water and simmer for 3- 4 minutes until tender. Refresh in cold water and drain. 2. Heat the oil in a non-stick wok or frying pan and add the mustard seeds 3. When the seeds start to pop, add the garlic and chilli and stir-fry for a few seconds 4. Add the beans, salt and sugar and stir-fry over a gentle heat for 6 or 7 minutes so that the beans can absorb all the flavour 5. Serve with a little freshly chopped coriander |
