Gujarati Carrot and Peanut Salad |

A refreshing Indian salad that is the perfect complement to a curry meal. The peanuts add a wonderful nuttiness to this simple and tasty salad. Ingredients:
2 cups grated carrots |
1/2 cup chopped salted peanuts |
3 tablespoons lemon juice |
1/2 teaspoon salt |
1 teaspoon white sugar |
1 green chile pepper, seeded and diced |
2 tablespoons finely chopped fresh cilantro |
Directions:
1. In a medium serving bowl, toss together the carrots and peanuts. In a separate bowl, whisk together the lemon juice, salt, sugar, chile pepper and cilantro. Pour over the carrots and stir gently to coat. Serve immediately. |
