Serve with warm cornbread for dipping, and next day over brown rice. Ingredients:
2 tbl safflower oil |
2 med yellow onion |
1.5 lb ground beef |
1 lb ground pork |
12 oz guinness |
1 ea red, yellow, orange, peppers |
2 green peppers |
2 fresh jalepenos, seeded and diced |
1 anaheim pepper, seeded and diced |
10 cloves garlic, crushed |
1 28oz can crushed tomatoes |
2 15 oz cans diced tomatoes with chilies |
4 tbl chili powder |
2 tbl cumin |
1 tbl coriander |
1 tsp cayenne |
1 tsp oregano |
1tbl brown sugar |
1/2 tsp salt |
dash cinnamon |
1 15 0z can mixed organic chili beans, rinsed and drained |
1 15 oz can organic black beans, rinsed and drained |
1 15 oz can organic red kidney beans, rinsed and drained |
Directions:
1. Heat oil in dutch oven over medium heat 2. saute onions 8-10 till golden and soft 3. add beef and pork, breaking up with back of spoon till just browned 4. drain fat 5. add guinness, bring to simmer 4-5 ins 6. add peppers, garlic, tomatoes, and all spices 7. mix well 8. add beans 9. bring to boil, reduce heat to low, and simmer 2-3 hours 10. I let it simmer on the stovetop for about 1.5 hours, then i had to run out, so i tossed it in the slowcooker on high for another couple of hours. |
