Guinness and Stilton Pate

Wonderful mix of flavors, great for a intimate dinner or a party. Found this on the web years ago and had forgotten about it until now!
Ingredients:
2 ounces butter
1 shallot, finely chopped
1 garlic clove, minced fine
2 ounces guinness stout
1/2 lemon, zest of
4 ounces stilton cheese, crumbled
1 bunch fresh parsley, finely chopped
salt, to taste
fresh ground black pepper
Directions:
1. Melt the butter in a saucepan and gently sweat the shallot and garlic until soft.
2. Remove from heat and allow to cool.
3. When cool, add the Guinness and stir gently for 3 minutes.
4. Add the remaining ingredients and stir well. Transfer to a blender and process until.
5. the mixture has bound.
6. Check the seasoning.
7. Divide between individual ramekins and.
8. refrigerate for at least 2 hours.
