Guinness and Stilton Pate |

Wonderful mix of flavors, great for a intimate dinner or a party. Found this on the web years ago and had forgotten about it until now! Ingredients:
2 ounces butter |
1 shallot, finely chopped |
1 garlic clove, minced fine |
2 ounces guinness stout |
1/2 lemon, zest of |
4 ounces stilton cheese, crumbled |
1 bunch fresh parsley, finely chopped |
salt, to taste |
fresh ground black pepper |
Directions:
1. Melt the butter in a saucepan and gently sweat the shallot and garlic until soft. 2. Remove from heat and allow to cool. 3. When cool, add the Guinness and stir gently for 3 minutes. 4. Add the remaining ingredients and stir well. Transfer to a blender and process until. 5. the mixture has bound. 6. Check the seasoning. 7. Divide between individual ramekins and. 8. refrigerate for at least 2 hours. |
