Guinness And Chocolate Cheesecake |

Submitted by M. Wassenaar this is a rich chocolate cheesecake accented with everyone's (at least on St. Pat's Day!) favorite stout. It will even tell you how to make chocolate clovers! Ingredients:

1 cup crushed chocolate cookies |
1/4 cup butter, softened |
2 tablespoons white sugar |
1/4 teaspoon unsweetened cocoa powder |

24 ounces cream cheese, softened |
1 cup white sugar |
3 eggs |
1/2 pound semisweet chocolate chips |
2 tablespoons heavy cream |
1 cup sour cream |
1 pinch salt |
3/4 cup irish stout beer (e.g. guinness) |
2 teaspoons vanilla extract |

1 ounce square semisweet chocolate |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). 2. Prepare a 9 springform pan with butter. 3. Combine crushed cookies, butter, 2 tablespoons sugar and cocoa in a small bowl. 4. Mix well and press onto bottom of springform pan. 5. Place cream cheese in large bowl and beat with electric mixer on low speed until smooth. 6. While beating slowly add 1 cup sugar and then eggs, individually. 7. Continue beating until smooth. 8. Combine the chocolate chips and heavy cream in microwave safe bowl. 9. Heat in the microwave until chocolate is completely melted, stirring every 30 seconds. 10. Beat chocolate into cream cheese mixture. 11. Add the sour cream, salt, beer and vanilla. 12. Blend until smooth. 13. Pour mixture into crust. 14. Place pan in a large deep baking dish and fill with water halfway up side pf springform pan. 15. Bake cheesecake in water bath for 45 minutes. 16. Turn oven off BUT do not remove cheesecake. 17. Set the oven door ajar slightly and let cheesecake remain another 45 minutes. 18. Remove from oven. 19. Cool on rack for 10 minutes and then remove ring from pan. 20. Chill at least 4 hours. 21. CLOVER: 22. Melt the semisweet chocolate in small bowl in microwave. 23. Make clovers by dropping 3 small drops of melted chocolate close to one another on waxed paper. 24. Drag a toothpick from dots to make the stem. 25. Chill until hardened. 26. Arrange clovers on top on chilled cheesecake. 27. **I would probably use the green mint chips for a bit more contrast! |
