Guilt Free Eggs With Curry and Water Chestnuts

Ingredients:
2 cups egg beaters egg substitute
2 tablespoons butter buds
3 green onions, minced
2 teaspoons curry (or to taste, madras curry is recommended)
8 ounces water chestnuts, diced
cayenne pepper, to taste
salt, to taste
apple, slices for garnish (optional)
banana, slices for garnish (optional)
orange juice, for dressing apple slices and banana slices as garnish (optional)
Directions:
1. Combine Egg Mixture ingredients and scramble over medium heat.
2. Serve eggs with optional garnish: apple slices and banana slices tossed in orange juice.
