This comes from Peg Bracken's I Hate To Cook Book. You can serve these warm or cold.
Ingredients:
1 small onion, minced
1 garlic clove
1/2 cup chicken stock
2 (15 ounce) cans artichoke hearts, drained
3 tablespoons lemon juice
1 1/2 teaspoons salt
1 teaspoon oregano
Directions:
1. Simmer the minced onion with the garlic clove in a little butter for 5 minutes. Remove the garlic clove, add all the rest of ingredients. Simmer with lid on for 10 minutes. Serve with lemon zest sprinkled on top.
