This comes from Peg Bracken's I Hate To Cook Book. You can serve these warm or cold. Ingredients:
1 small onion, minced |
1 garlic clove |
1/2 cup chicken stock |
2 (15 ounce) cans artichoke hearts, drained |
3 tablespoons lemon juice |
1 1/2 teaspoons salt |
1 teaspoon oregano |
Directions:
1. Simmer the minced onion with the garlic clove in a little butter for 5 minutes. Remove the garlic clove, add all the rest of ingredients. Simmer with lid on for 10 minutes. Serve with lemon zest sprinkled on top. |
