Recipe from the Bahamas-you can use frozen guava pulp with this recipe (defrosted of course). Ingredients:
2 ounces butter |
1 cup sugar |
3 eggs, beaten |
2 cups guava, pulp |
1/2 teaspoon ground nutmeg |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground cloves |
3 cups flour |
2 teaspoons baking powder |
black pepper, taste |
Directions:
1. Cream together the butter and sugar for about 30 minutes, then add the eggs and continue to mix for a further 5 minutes. 2. Blend in the guava pulp, nutmeg, cinnamon and cloves. 3. Sift together the flour and baking powder, then fold it into the mixture. 4. Pour the mixture into the top of a greased double boiler and steam for approximately 2 hours, or until an inserted skewer comes out clean. |
