You will love the combination of flavors and textures in this salad.The peppers give the salad some crunch. Ingredients:
1 pint grape tomatoes,halved |
salt and pepper |
4 scallions,thinly sliced |
1 garlic clove,minced |
1tbs grated zest and 1/3c juice from 3 limes |
1/4c olive oil |
2 poblano peppers,seeded and sliced into 2 matchsticks |
2 ripe avocados,pitted,skinned and cut into 1/2 pieces |
1/4c finely chopped fresh cilantro |
Directions:
1. Salt tomatoes; Toss tomatoes with 1/2tsp salt in medium bowl. Transfer to paper-lined baking sheet and let drain 15 mins 2. Make dressing: Combine scallions,garlic,lime zest,lime juice,1/2tsp salt and 1/2tsp pepper in large bowl. Let sit 5 mins.,then slowly whisk in oil 3. Toss salad: Add chilies,avocados,cilantro and drained tomatoes to bowl with dressing and toss to combine. Season with salt and pepper. Serve. |
