My friend make this salad. It was wonderful. I plan to make it tonight for company but am going to add cous cous to make it more of a substantial side dish and less like eating salsa ... yummy salsa. Ingredients:
1 pint grape tomatoes, halved |
1 yellow pepper, seeded and half inched diced |
1 (15 ounce) can black beans, rinsed & drained |
1/2 cup small diced red onion |
2 tablespoons minced jalapeno peppers, seeded (2 peppers) |
1/2 teaspoon grated lime zest |
1/2 cup freshly squeezed lime juice (2 limes) |
1/2 cup olive oil |
1 teaspoon kosher salt |
1/2 teaspoon ground black pepper |
1/2 teaspoon minced garlic |
3 ripe hass avocadoes, seeded, peeled and 1/2 inch diced |
Directions:
1. Mix olive oil, lime juice, lime zest, salt, pepper, and garlic. Toss together all ingredients with dressing then fold in avocado. |
