chunky guacamole
Ingredients:
1/2 a small onion, finely chopped
1-2 jalapenos, seeded and finely chopped
1 tomato, seeded and finely chopped
3 cloves of garlic, finely chopped
10 sprigs cilantro, chopped
3 ripe avocados
salt, about 1/2 tsp
juice of 2 limes (at least)
pepper to taste
Directions:
1. Mix the onion, jalapeno, tomato, garlic and cilantro.
2. When you are ready to serve, halve the avocados and scoop them into the bowl. Reserve the pits
3. Using hands or a spoon, roughly mash the avocados while mixing all ingredients. Leave the mixture slightly chunky.
4. Add salt, pepper and lime juice.
5. Add pits to the mixture and cover with plastic wrap pressed directly onto the guacamole. Let sit for a few minutes to allow flavors to blend.
