Just North of the Border by Dave Dewitt and Nancy Gerlach. Yield: 1 loaf Ingredients:
2 tbs chopped onion |
1 tbs butter |
2 cups flour |
1 1/2 tsp baking powder |
1/2 tsp salt |
1/4 tsp ground cumin |
1/2 cup butter, softened |
1 cup sugar |
1 cup mashed avocado |
2 eggs, beaten |
3 green new mexican chiles, roasted peeled, stems and seeds removed, chopped |
Directions:
1. Saute the onion in the tbs of butter until softened. 2. Sift together all the dry ingredients. 3. Cream together the softened butter and sugar. Add the avocado, eggs, onion and chiles. 4. Add the dry ingredients to the avocado mixture and mix well. Pour the batter into a buttered 9x5 loaf pan and bake for 15 minutes at 375 degrees. Reduce heat to 350 degrees and continue to cook for 55 minutes or until done. |
