A good guacamole recipe for those who like it a bit spicy with lots of garlic and personality Ingredients:
2 ripe avocados |
2 cloves garlic - minced |
1 jalapeno chile quartered lenthwise |
1 quarter red onion - chopped coarsely |
1/2 tbsp tabasco sauce (or to taste) |
1 tsp worcestershire's sauce |
1 roma tomato, seeded and diced |
kosher salt |
1/4 cup chopped fresh cilantro |
juice of 1/2 fresh lime |
Directions:
1. Slice Avocados in half and pit 2. Using a butter knive, Score the flesh of the avocado and scoop into a medium bowl 3. Scoop out the seeds and ribs of the jalapeno quarters and mince 4. Scoop garlic, jalapenos and 1/2 tsp of coarse kosher salt into a mortar or Molcajete 5. Using pestle - grind chilies and garlic together until a wet paste forms. 6. Mix flavoring paste and cubed, seeded avocado. 7. Add tomato and onions into mixture - check for flavor 8. Add salt, Tabsco and wosrtechire sauce. |
