A great and easy recipe that goes welll with my home-made tortilla chips, or can be used as a garnish on wraps as well as all Mexican and Tex-Mex. Enjoy! Ingredients:
2 medium ripe avacados, seeded, peeled and cut up. |
1 or 2 small tomatoes, chopped into small pieces (optional) |
1/2 small onion, chopped into small pieces |
1 small red jalapeno, finely chopped with seeds removed (optional) |
2 tbsp lemon juice |
1 clove garlic, minced (optional) |
1/4 tsp chili powder (optional) |
1/2 tsp salt |
1/4 tsp pepper (optional) |
Directions:
1. In a mixing bowl smash the avacados with a fork or wooden spoon until you get the consistency you like (I like mine lumpy!). 2. Add the remaining ingredients (ommiting the optional ones - your preference) and mix well. 3. Serve immediately, or keep TIGHTLY COVERED in refrigerator until ready to serve. |
