This is an easy, simple guacamole recipe that I make over and over during the summer! Great to serve as a dip with corn chips, or to add to burritos and tacos! The cilantro and habanero are both optional.Also, you can use jalapenos if you like, in place of the habanero. Use ripe avocados for best results. Usually, I'll toss the red onion, garlic and habanero into the food processor to chop up very fine for the dip.
Ingredients:
2 large avocados
1 -2 tablespoon red onion (minced)
1 small tomato (chopped)
2 -3 tablespoons fresh lime juice
1 garlic clove (minced)
1/4 cup cilantro, chopped (optional)
1 tablespoon habanero pepper, to taste (optional)
salt
pepper
Directions:
1. Peel, pit and slightly chop up the avocados and add to a bowl.
2. Mash the avocado a little bit with a fork and add lime juice.
3. Finely chop the onion, garlic, and habanero, if using, and mix into the avocado and lime juice. Continue to mix until desired consistency is reached (I like mine kind of lumpy).
4. Chop up tomato into small pieces and chop cilantro, if using. Add both to mixture and stir to combine.
5. Add salt and pepper to taste.
