Who would think to put cumin in guacamole? I found this recipe in The Mexican Cookbook, and it's delicious. Simple to prepare, and you won't want to stop eating it. I used a lemon olive oil for fun...yum. Ingredients:
2 avocados, large and ripe |
1 lime, juice of (to taste) |
2 teaspoons olive oil |
1/2 onion, very finely chopped |
1 poblano chile, mild, seeded, and finely chopped |
1 garlic clove, crushed |
1/4 teaspoon ground cumin |
1 tablespoon fresh cilantro, chopped, plus extra to garnish |
salt |
pepper |
Directions:
1. Cut the avocados in half lengthwise and twist the 2 halves in opposite directions to separate. 2. Stab the pit with the point of a sharp knife and lift out. 3. Peel, then coarsely chop the avocado halves and place in a nonmetallic bowl. 4. Squeeze over the lime juice and add the oil. 5. Mash the avocados with a fork until the desired consistency-either chunky or smooth-is obtained. 6. Stir in the onion, chili, garlic, cumin, and chopped cilantro, then season to taste with salt and pepper. 7. Transfer to a serving dish and serve immediately. 8. To avoid discoloration, sprinkle with extra chopped cilantro. |
