My southwest version of a Mediterranean favorite Ingredients:
2 cups bulgur wheat |
2 cups chicken stock or 2 cups broth |
1 cup cilantro, chopped |
2 tomatoes, seeded and diced |
3 green onions, thinly sliced |
2 garlic cloves, minced |
2 teaspoons salt |
1 teaspoon pepper |
3 tablespoons lime juice |
3 tablespoons olive oil |
1 avocado |
1 cup grilled chicken (optional) |
Directions:
1. warm chicken stock and add to bulgur wheat. 2. add minced garlic and let soak for one hour. 3. add all ingredients except avacado, toss gently and refrigerate for one hour to let flavors marry. 4. when ready to serve, toss once again with a little olive oil, and add slices of fresh avacado. |
