G'shtuptaful Lew'r - Stuffed Calf Liver |

A twist on a homey meal from the Pennsylvania Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
1 calf liver |
salt and pepper |
1/4 cup flour |
3 slices salt pork or 3 slices bacon |
3 cups soft breadcrumbs |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 tablespoon sage leaf, crushed |
1 tablespoon onion, minced (more if desired) |
1/3 cup butter |
Directions:
1. For the dressing: combine the first five ingredients; add butter and toss lightly with a fork. 2. Wash liver in cold salted water and dry well. 3. Make an incision in the thickest part using a sharp knife. 4. Fill with stuffing. 5. Season with salt and pepper; dredge with flour. 6. Place in roasting pan and place strips of pork on top. 7. Add a little water and bake at 350F for 1 hour. |
