Bearfoot Contessa Ingredients:
1 cup onion |
1 tbs olive oil |
1 tsp kosher salt |
1/2 tsp ground black pepper |
1 tsp fresh thyme |
1/4 cup worcestershire sauce |
1 tsp tomato paste |
1/2 cup bread crumbs |
1 1/2 large eggs |
1/3 cup ketchup |
19 oz ground turkey - 99% fat free |
Directions:
1. In a medium pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 min. Add the worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temp. 2. Combine ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/4 hour until the internal temp is 160 degrees F. and the meatloaf is cooked through. (A pan of water in the oven under the meat loaf will keep the top from cracking). Serve hot, at room temp or cold in sandwich |
