9 medium summer squash, sliced |
1 1/3 lbs lean ground turkey |
1/2 cup long grain rice, uncooked |
1 medium onion, chopped |
1 (8 ounce) can tomato sauce |
1 (15 ounce) can diced tomatoes |
1 teaspoon salt |
1/2 teaspoon pepper |
1 cup water |
Directions:
1. Cut squash about 1/4 inch thick. 2. In a large sauce pan, combine tomatoes, tomato sauce, onions, water and seasonings. Add squash on top, then rice. Crumble ground beef on top. 3. Bring to a boil, then cover, lower heat and simmer 50 minutes. Stir occasionally. Add more water if needed. 4. Let sit 15 minutes before serving. |
