Ground Turkey and Spinach Lasagne |

Lasagne with ground turkey instead of beef and low-fat cottage cheese instead of ricotta. Ingredients:
13 1/2 oz whole wheat pasta |
15 oz low fat cottage cheese |
10 oz frozen spinach |
1 1/5 lbs ground turkey |
4 cups tomato sauce |
2 cups reduced fat mozzarella cheese |
Directions:
1. Cook lasagne noodles. 2. Brown ground turkey (add seasonings to taste). 3. In a separate bowl, combine thawed/drained spinach with cottage cheese, mixing well. 4. Once cooked, lay lasagne noodles flat on lightly oiled jelly roll pan. 5. In a 9x13 pan sprayed with Pam/cooking spray, place 5 or so lasagne noodles to cover. Layer ground turkey and 1 1/2 cups tomatoe sauce over noodles. Add 5 or so more noodles on top to cover. Layer spinach/cottage cheese mixture over noodles. Cover with remaining noodles. Sprinkle mozzarella cheese over the top. 6. Bake. |
