Ground Turkey and Barley Casserole |

Healthy comfort food. Ingredients:
2 lbs ground turkey |
1/2 cup onion, chopped |
1/2 cup celery, chopped |
1/2 cup bell pepper, chopped |
3/4 cup quick-cooking barley |
1 (6 ounce) can tomato paste |
1 1/2 cups beef broth |
1/2 cup water |
1 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Brown the turkey and vegetables in a large skillet. 2. Drain and return to skillet. 3. Add tomato paste, beef broth, water, salt and pepper. 4. Bring to a boil, then simmer for 20 minutes or until the barley is done. 5. You may need to add more water if it appears too dry. |
