This recipe comes from Melting Pot Potluck. It was put together to announce the arrival of a new pastor and his wife. Origin: Africa. Ingredients:
1 (3 lb) whole chickens |
6 onions, chopped |
4 tomatoes, chopped |
2 tablespoons peanut oil |
6 okra, sliced |
1 eggplant, cubed |
3 cups roasted peanuts |
6 cups cold water |
2 teaspoons salt |
1 teaspoon pepper |
6 hard-boiled eggs |
Directions:
1. Cut up onions, tomatoes, chicken, okra, and eggplant. Fry peanuts and mash with a mortar and pestle, or run through grinder until mashed. This can also be done in a blender. Mix peanuts with water, salt, and pepper. Add all stew ingredients except eggs. Boil one hour. Shell eggs and put in stew at last minute. Serve with rice, bananas, or coconut as side dishes. |
