This is a hearty, good soup. Adapted from Quick Cooking. Ingredients:
1 1/2 lbs ground beef |
1/2 cup chopped onion |
1/2 cup chopped celery |
1/2 cup carrot |
7 cups water |
1 (1 1/4 ounce) envelope au jus mix |
2 tablespoons beef bouillon granules |
2 bay leaves |
1/8 teaspoon pepper |
1 1/2 cups uncooked egg noodles |
Directions:
1. In a large saucepan or Dutch oven, cook the beef, onion, celery and carrot over medium heat and drain. 2. Add the water, au jus mix, bouillon, bay leaves and pepper and bring to a boil. 3. Stir in the noodles and return to a boil. 4. Cook, uncovered, for 15 minutes or until noodles are tender, stirring occasionally. 5. Discard bay leaves before serving. |
