This recipe was a favorite when I was a child; my older sister made it. When she passed away, the recipe was nowhere to be found. As an adult, I tried to duplicate it to no avail. Then, years later, my aunt found some recipes my sister had given her years before. Read more ......and there it was! It's my comfort food. Ingredients:
one pound of ground beef - i use chuck or lean |
1/2 cup chopped onion |
1/2 cup chopped green pepper |
one regular (14.5oz) can of diced tomatoes |
3/4 cup of rice, uncooked |
one envelope lipton onion soup mix |
one cup of water |
spices to taste - diced garlic, hot sauce, your choice |
shredded cheddar cheese - at least 1/2 cup |
Directions:
1. Brown the ground beef in a skillet that has a lid. 2. Drain any grease. 3. Add the chopped onion and green pepper. 4. Cook until veggies start to soften. 5. Add the can of diced tomatoes with juice, the rice, the dry soup mix, the water and the spices. 6. Stir to blend. 7. Cover and simmer for 30- minutes until rice has cooked and absorbed liquid. 8. Sprinkle shredded cheese on top; cover and let cheese melt. |
