Tzimmes means fuss .. like making a tzimmes over a guest.. Grossingers was a Hotel in the Catskills of New York. Molly Grossinger's The Art of Jewish Cooking is my favorite cookbook. The dish is so good!!!! This recipe is basically verbatim ( i did change some directions to make them more clear) Ingredients:
1 1/2 lbs prunes |
3 cups boiling water |
2 tablespoons oil |
3 lbs beef brisket, cut into 6 pieces |
2 onions, diced |
1 1/2 teaspoons salt |
1/2 teaspoon pepper |
3 sweet potatoes, peeled and cut into chunks |
1/2 cup honey |
2 cloves |
1/2 teaspoon cinnamon |
Directions:
1. 1. Wash prunes and let them soak in the boiling water for 1/2 hour. 2. 2. Heat the oil, in a dutch oven, over medium. 3. 3. Brown the meat with the onions. 4. 4. Sprinkle with salt and pepper. 5. 5. Cover and cook on low heat for 1 hour. 6. 6. Add the undrained prunes, sweet potatoes, honey, cloves and cinnamon. 7. 7. Replace cover loosely and cook over low heat at least 2 hours ( more is better). |
