This recipe is from a locally family owned cafeteria that was a fixture in St. Louis for 73 years. Very easy to make Ingredients:
2 eggs |
1/3 cup sugar |
1/4 teaspoon salt |
3/4 teaspoon vanilla |
2 cups whole milk |
1 tablespoon butter, melted |
1 (9 inch) unbaked pie shell |
1/2 teaspoons grated nutmeg |
Directions:
1. In a blender,combine 1st 5 ingredients 2. Blend until well combined 3. To eliminate air bubbles, cover and refrigerate about 3 hours 4. Place a rack in the middle of the oven 5. Remove upper rack 6. Preheat oven to 375 degrees 7. Brush meted butter over unbaked pie shell 8. Sprinkle with nutmeg 9. Place pie shell on middle oven rack Pour filling into shell 10. Bake until set, about 30-40 minutes 11. The custard should still jiggle slightly when you tap the edge of the pan, it will continue to set as it cools 12. Cool completely on a rack |
