Grits With Goat Cheese And Chives |

Chives in the garden are a sure sign of spring. Here's one way to use them. Also, low fat, low cal! Ingredients:
2 (14 1/2 ounce) cans chicken broth |
1/2 cup water |
1 cup quick cooking grits |
1/3 cup sliced fresh chives |
4 ounces soft fresh goat cheese (such as bucheron or montrachet) |
salt |
ground pepper |
fresh chives, cut into 2 inch pieces, for garnish |
Directions:
1. Bring broth and water to a boil in a heavy saucepan 2. Gradually stir in grits 3. Reduce heat to low, cover and cook 4 minutes 4. Uncover, simmer until thickened to consistency of thin mashed potatoes, stirring often, about 3 minutes 5. Add sliced chives and cheese 6. Stir until cheese melts 7. Season to taste with salt and pepper 8. Top with chive pieces |
