Side dish or a nice light lunch. Ingredients:
2 medium zucchini, cut diagonally, into 1/2 inch thick slices |
2 teaspoons extra-virgin olive oil |
1/4 teaspoon course sea salt |
1/4 teaspoon ground black pepper |
Directions:
1. Preheat grill pan over medium-high heat. 2. Combine all the ingredients in a bowl, toss well to coat. 3. Arrange zucchini in a single layer in a pan, and grill for 4 minutes, turning after 2 minutes. |
