Grilled Zucchini Roll-Ups |

From The Food you Crave by Ellie Krieger. These are delicous and look really pretty when served. They make a great appetizer for a BBQ or something like that. The recipe says you can make these ahead of time but I think they taste better when the zucchini is still a little warm. Some people think the basil flavor is overpowering- so keep that in mind! Ingredients:
3 small zucchini, cut lengthwise into 1/4 inch thick slices |
1 tablespoon olive oil |
1/8 teaspoon salt |
1 pinch ground pepper |
1 1/2 ounces goat cheese |
1 tablespoon minced fresh parsley (i've used dried and it is just as good) |
1/2 teaspoon lemon juice |
2 ounces baby spinach leaves (about 2 cups) |
1/3 cup fresh basil leaf |
Directions:
1. Discard outermost zucchini pieces. 2. Brush zucchini with olive oil on both sides. Sprinkle with salt and pepper. 3. Grill until tender (about 4 minutes). 4. In a small bowl, combine goat cheese, parsely, and lemon juice. 5. Put 1/2 teaspoon of the cheese mixture about 1/2 inch from the end of a zucchini slice. 6. Top with a few spinach leaves and one small (or half a large) basil leaf. 7. Roll up and place seam side down on a platter. 8. You can make these up to a day before you are ready to serve and store them in an airtight container in the refridgerator. |
