Grilled Zucchini and Bell Pepper Couscous |

Ingredients:
3 zucchini 1/4 slices |
2 red peppers quartered |
2 teaspoon(s) olive oil |
3 clove(s) garlic minced |
1/2 teaspoon(s) salt |
1/2 teaspoon(s) cumin seeds |
3/4 cup(s) chicken broth |
1 cup(s) water |
1 cup(s) couscous |
Directions:
1. Prepare grill. Slice zucchini; quarter peppers; brush grill and veggies with oil; cook till tender (5 min each side) 2. Mince garlic and mash with salt to paste. in dry saucepan toast cumin seeds; 1 minute. Add broth adn water and bring to boil. Add couscous and cover pan. Let stand 5 minutes. Fluff couscous, mix with vegetables, garlic paste and salt as needed. |
