Delicious low-cal dinner option with good fats. I use this as my main dinner dish, and have salad on the side. To cut the calories even more, use less olive oil. Ingredients:
1 (medium) zucchini |
2 tbsp olive oil |
2 tbsp fresh lemon juice |
1 clove garlic |
1 tsp dried oregano |
1/4 tsp curry powder |
Directions:
1. Slice zucchini lengthwise into strips, then saute with olive oil, lemon juice, garlic, oregano and curry powder. |
