Grilled Watermelon W/Chevre, Pepitas & Cilantro Vinaigrette |

Stolen-of course. *Fresh*, best quality ingredients, please. I moved a few ingredients around and omitted the sugar. ) The servings, preparation and cooking times for this recipe are all estimated. Feel free to use your favorite cilantro vinaigrette but it must be homemade-please. Ingredients:
1 small watermelon |
olive oil |
6 ounces chevre cheese |
1/4 cup pepitas, toasted |
white onion, diced very small |
fresh cilantro, to garnish |
3 tablespoons raw apple cider vinegar |
3 tablespoons fresh lemon juice |
3 tablespoons fresh lime juice |
1 teaspoon fresh ginger, grated |
1 tablespoon spicy mustard |
2/3 cup olive oil |
1/2 cup fresh cilantro, chopped |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Whisk together the cilantro-lime vinaigrette in a non-reactive bowl and set aside. Or, use an immersion blender. 2. Cut the watermelon into 3/4 thick triangular slices (like a small slice of pizza.). 3. Use a pastry brush to lightly brush olive oil on each side of the watermelon slices. 4. Grill the watermelon slices on a hot grill for about 2-3 minutes each side or until there are grill marks but the watermelon is still firm and *NOT* mushy! 5. Arrange the slices on a platter. 6. Top each watermelon slice with about 1 tablespoon goat cheese; diced white onion, pepitas and a drizzle of the cilantro vinaigrette. 7. Garnish with a little bit of fresh cilantro. 8. Serve immediately. |
