I know it sounds weird . . . but it's absolutely fantastic! After enjoying this at a friends home I immediately came home in search of the recipe. Great summer salald! This is a combination of a couple recipes I found on the internet. NOTE: Grill with the rind on, however remove rind before serving! Ingredients:
1 (5 lb) seedless watermelon, cut into 8 slices |
2 tablespoons olive oil (for brushing on watermelon) |
salt and pepper |
2 bunches spinach or 2 bunches arugula, trimmed |
1/2 cup extra virgin olive oil |
1/4 cup balsamic vinegar |
2 tablespoons finely chopped mint leaves, plus extra for garnish |
1 cup crumbled goat cheese |
Directions:
1. Preheat grill. 2. Brush watermelon slices with oil. Season with salt and pepper. Grill watermelon 1-2 minutes on each side. Chill for several hours before serving. 3. In a bowl, whisk together the olive oil, mint and vinegar; toss spinach/arugala with dressing just before serving. Season with salt and pepper to taste. 4. To assemble:. 5. (The watermelon can be cut into bit size pieces however a large piece of grilled watermelon is pretty darn impressive!). 6. Place spinach/arugala mixture on chilled plates, top with watermelon and sprinkle with goat cheese. |
