Grilled tomatoe with fresh herbs goes perfectly with your dinner as a side dish. It's can be top with cheese. if desire. Ingredients:
8 tomatoes (2 3/4 lbs. total) |
salt and freshly ground black pepper |
4 tsp. each finely chopped rosemary, thyme, and oregano leaves |
1/4 cup extra virgin olive oil |
Directions:
1. Prepare a gas or charcoal grill for direct, high heat. 2. Meanwhile, cut tomatoes in half crosswise and set on a platter; liberally season with salt, pepper and herbs. Drizzle with olive oil. 3. Place tomatoes cut side up on cooking grate; cover gas grill. Cook without turning until hot in center, 5 to 6 minutes. Transfer with a wide spatula to a clean platter. |
