Grilled Vegetable Sandwich |

Serve this on ciabatta rolls or other hearty roll. Ingredients:
4 ciabatta rolls, split |
1 lemon, halved |
2 tablespoons olive oil |
1 tablespoon balsamic vinegar |
3 small zucchini or 3 small summer squash, cut lengthwise in 1/4 inch slices |
1 small red onion, cut into 1/4 inch slices |
2 ounces feta cheese, crumbled |
fresh mint leaves, for garnish |
Directions:
1. Lightly brush one tablespoon olive oil on the cut sides of the rolls and lemon halves; set aside. 2. Combine remaining oil and vinegar in a small bowl. 3. Brush a little of mixture on zucchini and onion, then season with salt and pepper. 4. Grill zucchini and onion, over medium heat, until tender, about 2 to 3 minutes per side. 5. Meanwhile toast rolls, cut side down, about 3 minutes. 6. Place vegetables on rolls, top with feta and mint, if using; drizzle with remaining vinegar and oil and squeezed lemon juice. |
