This is very easy to make. Just mix it up and grill a few minutes. Very tasty Ingredients:
1 red pepper, cut into large pieces |
1 yellow pepper, cut into large pieces |
1 zucchini, cut into 1/4 inch think slices |
1 eggplant, cut into 1/4 inch think slices |
1 medium red onion, cut into 1 inch thick chunks |
1/3 cup balsamic vinaigrette |
Directions:
1. Place vegetables in large bowl. 2. Add dressing; toss to coat. 3. Let stand 20 minutes to marinate, stirring occasionally. 4. Remove vegetable mixture from marinade. Reserve marinade for later use. 5. Preheat barbecue to medium heat. Place vegetable on grate of barbecue. 6. Grill 8 min or until vegetables are crisp tender, turning occasionally. 7. Place vegetable mixture in large bowl. Add reserved marinade, toss lightly. |
