Grilled Turkey and Goat Cheese Sandwiches |

Feeding a crowd? Use a pizza crust, sliced in half vertically, to create a large workspace for your stacker. Use a spreadable soft goat cheese for best results. Ingredients:
cooking spray |
1/2 cup (4 ounces) goat cheese |
1 (10-ounce) italian cheese-flavored pizza crust (such as boboli), cut in half horizontally |
1/2 cup chopped fresh basil |
1 (7-ounce) bottle roasted red bell peppers, drained |
3/4 pound thinly sliced cooked turkey breast |
Directions:
1. Heat a large nonstick skillet coated with cooking spray over medium heat. 2. Spread cheese over one half of crust. Arrange basil, peppers, and turkey over cheese. Top with the remaining half of crust, and cut into 4 wedges. Add sandwiches to pan; cook 3 minutes on each side or until browned. |
