good with eggs,or any meat Ingredients:
4 or 5 ripe red tomatoes |
3 tablespoons extra-virgin olive oil |
5 cloves garlic, minced |
2 tablespoons fresh thyme leaves |
1/4 cup parmesan cheese grated |
Directions:
1. Cut the tomatoes in half crosswise, season with Salt and Pepper and a 2. dash of granulated garlic. Heat the oil in a small frying pan over 3. medium heat.. Add the garlic, and cook until just starting to turn 4. golden brown, 1 to 2 minutes. Pour the garlic and oil into a heatproof 5. bowl. 6. Oil the grill and set for high heat. Place the tomatoes cut side down 7. and grill for 3 to 5 minutes. Turn over, top with the garlic oil 8. mixture and continue to cook for another 3 minutes. Remove from grill 9. and top with thyme, salt and pepper, a dash of granulated garlic and 10. the parmesan cheese. Serve immediately. |
