Grilled Tilapia with Shirazi Salad

Shirazi is a traditional Mediterranean salad composed of fresh parsley, cucumber, tomato, and red onion. It pairs well with the mild, sweet flavor of tilapia.
Ingredients:
3/4 cup chopped fresh parsley
2 tablespoons diced peeled cucumber
2 tablespoons diced tomato
2 teaspoons diced red onion
2 teaspoons fresh lemon juice
2 teaspoons olive oil
1 teaspoon minced garlic
1/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 (6-ounce) tilapia fillets
cooking spray
lemon wedges
Directions:
1. Combine first 7 ingredients. Stir in 1/8 teaspoon each of salt and pepper. Cover salsa, and chill at least 30 minutes.
2. Preheat grill.
3. Sprinkle fish fillets with remaining 1/8 teaspoon each salt and pepper. Place fillets on grill rack coated with cooking spray; grill 3 minutes on each side or until fish flakes easily when tested with a fork. Serve with salsa and lemon wedges.
