Growing up in the Midwest, the idea of fish tacos didn't sound right at all to me. After I moved to California, I was introduced to these delights. I made some myself the other night and they turned out great. I used the Chipolte Taco Sauce #214124 on these. WOW! Ingredients:
2 tilapia fillets |
1 tablespoon taco seasoning |
1 lime |
cilantro |
shredded red cabbage |
tortilla |
2 avocados |
1/2 cup fat free sour cream |
Directions:
1. Scoop out the flesh of the avocado and mix with the sour cream in a food processor. Then put in the fridge to cool. 2. In a Ziploc bag, combine the juice of the lime with 1 Tbps of taco seasoning. Shake the bag to mix and then add the Tilapia Fillets. Marinate for about 10 minute. 3. Put on grill at low to med heat and cook for about 10 minute turning once until the fish is flakey. 4. To serve, spread warm tortillas with warm avocado cream. Top with the tilapia, and sprinkle with cilantro and red cabbage. |
