Ingredients:
15 ounce(s) canned black beans, rinsed and drained |
1/3 cup(s) cilantro chopped (optional) |
2 teaspoon(s) honey |
juice of 1 lime, divided |
1 kiwi, peeled and diced (1/2 cup) |
2 peaches or nectarines, pitted, diced into 1/2 inch pieces (1 1/2 cups) |
1/2 red pepper, diced (1/2 cup) |
1/2 teaspoon(s) salt |
2 scallions, sliced |
1 pound(s) swordfish fillets |
1/4 teaspoon(s) tabasco |
Directions:
1. Preheat grill or grill pan 2. In Medium bowl mix first 9 ingredients with half of the lime juice. 3. Set Salsa aside. 4. Drizzle remaining juice over fish. 5. Grill 6-8 minutes until done, turning once. 6. Serve Fish with Salsa. 7. Add 1 whole grain roll. 8.
